PR's Classic Chicken Noodle Soup

Ingredients:
2 boneless skinless chicken breasts 5-6 oz each sliced and diced
1/2 medium onion sliced and then quartered
2 garlic cloves peeled and chopped
2 quarts water
10 chicken bouillon cubes or 3 Tablespoons Chicken Base
1/2 Tablespoon sugar
1/2 teaspoon pepper
1 teaspoon each oregano and basil
1 can diced tomatoes
10 oz package of frozen mixed vegetables
30-40 fettuccini broken in 1-2 inch pieces
4 Tablespoons Olive Oil
Preparation: Start water in large 3 quart pot add bouillon cubes, sugar, pepper, oregano and basil. Add diced tomatoes and simmer. In small 1 quart pot add olive oil, onion and garlic. Cook until transparent. Remove from pan and reserve for later. Add chicken to pot with olive oil. Salt and pepper generously. Keep stirring chicken until browned. Remove from pan add to large pot with chicken stock along with garlic and onion. Next add 2 cups water to small pan. Add 1/2 teaspoon salt and fettuccini pieces. Cook for 10 minutes until pasta is somewhat tender. In same pan add frozen mixed vegetables bring to light boil and then simmer for 15 minutes. Add pasta and vegetables and water to large pot. Slowly simmer for 30 minutes. Taste for salt content. You may add 1 to 2 cups more water to satisfy your taste because this can be quite hearty. ENJOY. Whenever I’m coming down with a cold or flu this soup is a must. If it doesn’t cure you, it sure will make you feel much better.
